Classic American meatloaf: tender, juicy beef under a sweet and tangy ketchup glaze. Leftovers make great sandwiches, and cooked slices freeze well.
Ingredients
- Ground beef900 g
- Onion1 pcs
- Garlic2 clove
- Eggs2 pcs
- Dried breadcrumbs80 g
- Milk120 ml
- Worcestershire sauce1 tbsp
- Dried thyme1 tsp
- Ketchup120 ml
- Brown sugar2 tbsp
- Cider vinegar1 tbsp
- Olive oil1 tbsp
- Saltto taste
- Black pepperto taste
Steps
- 1
Heat the oven to 180°C (350°F; 160°C fan). Soften the finely chopped onion in the oil for 5 minutes, add the garlic for 1 minute, then let it cool a little.
- 2
In a large bowl, soak the breadcrumbs (80 g) in the milk (120 ml) for 5 minutes. Add the beaten eggs (2), Worcestershire sauce, thyme, a good pinch of salt, pepper and the onion.
- 3
Add the beef (900 g, about 2 lb) and mix gently with your hands until just combined; overmixing makes the loaf dense.
- 4
Shape into a loaf about 23 × 12 cm (9 × 5 in) on a lined baking tray, or press it into a loaf pan.
- 5
Stir together the ketchup (120 ml), brown sugar (2 tbsp) and vinegar, and spread half over the loaf. Bake for 40 minutes, spread on the rest and bake 15–20 minutes more, until the centre reaches 71°C (160°F).
- 6
Rest for 10 minutes before slicing.
